    This made at probably 4 servings despite the fact I was a tomato and an avocado short. Super delicious! Added crumbled goat cheese and wow, this will be on a weekly rotation. Yum!

    add the avocado after you plate the salad this way you can store leftovers (if any) w/o the mush 😉
